It’s May, but last season’s bountiful crop of Appalachian is still going strong. We tasted a wheel this week and were stunned at how wonderful these seven-month cheeses are tasting.
While they still have the characteristic lactic tastes of butter and cream, the bright, fresh lemon flavors have mellowed wonderfully and have brought out entirely new flavors: roasted nuts, caramel, and even a hint of spicy vanilla.
